If a fluid recipe can be served in a thickened fluid form, then it needs to be extended with fluid recipe substitutes across the fluid types (honey thick, nectar thick, etc.).

Displaying (i.e., Turning On) the Fluid Substitution Grid for a Fluid Recipe
To display (i.e., turn on) the fluid substitution grid for a fluid recipe so that you can add fluid recipe substitutes, complete the following steps:
- Select Recipes > Recipes Listing. The Recipes screen appears.
- Locate and open the recipe you want to extend with fluid recipes. The recipe slide-out panel appears.
- Expand the Extensions section.
- Select the Fluid Recipe check box. The fluid substitution grid appears. Proceed to the sections below to extend a recipe with fluid recipes.
About the Fluid Substitution Grid
Layout
The regular recipe is displayed as a row and the fluid types (honey thick, nectar thick, etc.) are displayed as columns for you to assign the substitute fluid recipes. A substitute fluid recipe assigned to a fluid type is then available to a person who has been assigned that fluid type in their profile. (Right-click screenshot below to open and expand in new tab.)
Why is a Cell Grey?
If a cell is grey, it indicates that it is currently unpublished, which means the person cannot be assigned that fluid type. However, the cell remains available to assign substitute fluid recipes. Note that fluid types are published/unpublished via the Diet Order Settings screen (Tools & Setup > Diet Orders); see Publishing/Unpublishing a Fluid Type for more information.
When a Parent Account Updates Fluid Substitutes
When a parent account updates the fluid recipe substitutes for a recipe, the logic regarding the data flow to the child accounts is as follows:
- If a child account has not made changes to the fluid recipe substitutes for the recipe, then the parent changes take effect.
- If a child account has made changes to the fluid recipe substitutes for a recipe, then the child account is now considered to "own" the fluid substitution grid. Therefore any changes by a parent account to the fluid substitution grid will not take effect at the child account (i.e., the changes remain unseen by the child account).
When the fluid substitution grid for a child account differs from that of its parent account, the Revert to Master button appears to indicate such and allow the user to revert the fluid substitutes to the parent account.
Note: If your account has been set up with custom fluid types (see Requesting a New Diet, Texture or Fluid Type), then those fluid types are only available at your account (i.e., a parent account does not see them). Therefore, if your account only makes changes to those custom fluid types, then the system does not consider that your account owns the fluid substitution grid. When your account does not own the fluid substitution grid, then changes to the grid by the parent account will flow down to child accounts.
Why is an Cell Surrounded by a Blue Border?
Any fluid substitution grid cell highlighted in blue indicates it has been modified by your account.
Why Does a Fluid Type Have a Blue Header?
The parent-child account hierarchy structure in the Mealsuite system allows fluid types owned by a parent account to assign maintenance responsibility of those fluid types to their child accounts.
What this means is that the parent account will no longer be responsible for extending to those fluid types when extending a recipe with fluid recipes. Instead, the responsibility for extending fluid recipes to those fluid types will be with each child account.
When a child account has been assigned maintenance responsibility for a fluid type, then the header of such a fluid type is highlighted blue in a fluid substitution grid (screenshot below),
Warning! For fluid types that continue to be maintained by your parent account, it is still the responsibility of your facility to review the substitute fluid recipes for these fluid types to make sure the substitute fluid recipes are appropriate for your facility standards that you have for fluid types.

Working in an Fluid Substitution Grid Cell
The Set Extension drop-down for a cell has the following options:
- Serve Regular Recipe
- Serve Existing Recipe
- Do Not Serve
- Extension Template - exists only if an extension template has been built for the fluid type and recipe category.
Serve Regular Recipe
Selecting this option serves one portion size of the regular recipe for the fluid type. When the regular recipe is served for a fluid type, the associated cell contains a green check mark.
Serve Existing Recipe
Selecting this option opens the Serve Recipe window for you to search for and select an appropriate substitute fluid recipe for the fluid type.
Do Not Serve
Select this option if nothing is offered as a substitute for the regular item. On the personal menu, "No Fluid Substitute" will display for the item, and the reports will display "No Fluid Substitute" for that item.
Extension Templates
A fluid substitution grid cell may have a template available as an option to create a recipe for the designated fluid type. For example, if extending a recipe that belongs to the entrée category, then in the honey thick cell of the fluid substitution grid, there is the template Create Honey Thick Recipe. An extension template contains common details applicable to the designated fluid type. For example, honey thick recipes always contain the same preparation steps, have the same portion size, ingredients, etc. Therefore, by using an extension template, you can quickly create a recipe that contains those common details. An extension template can be configured with the following details:
- Recipe Information:
- Portion Size
- Portion Size Description
- Serving Utensil
- Tags
- Ingredients and Preparation Steps:
- Cook Method
- Cook Temp
- Cook Time
- Cook End temp
- Holding Temp
- Holding Time
- Ingredients to be pulled into the recipe
- Preparation Steps
Once you save the new substitute recipe built from the extension template, the recipe can be edited accordingly.
Note 1: If you are a facility account creating a substitute recipe from an extension template, the recipe is automatically given the My Recipes label in the Recipe Box (see What is a "My Recipes" Recipe? for information about the My Recipes label). If you are a system or corporate account creating the substitute recipe, the label in the Recipe Box remains as to what is in the template.
Note 2: An extension template is associated with a recipe category (i.e., entrée, soup, vegetable, etc.). Therefore, that extension template will only be available to you if the regular recipe being substituted belongs to the recipe category associated with the extension template.
Having extension templates for different recipe categories offers the flexibility needed by the MealSuite system to meet different recipe details (e.g., preparation steps, amount of liquid, etc.) for the various fluid type/recipe category combinations.
Note 3: A recipe extension template can be built by corporate accounts users and above. Facility account users do not have the ability to build extension templates. If you are a corporate account user or above, refer to the following article to build a recipe extension template: Building a Recipe Extension Template (Corporate Account Users and Above).
Copying a Single Fluid Substitution Grid Cell
If a fluid recipe in a fluid substitution grid cell is appropriate for another cell, you can copy the cell by clicking and holding it, and then pasting it to the other cell by dragging it to that cell.
Extending Regular Recipe across All Fluid Types
To extend the regular recipe across all fluid types, click the grey check mark of the fluid. The check mark turns green to indicate that the regular recipe is applied across all fluid types.
Applying “Do Not Serve” for all Fluid Types
To apply ”Do Not Serve” across all fluid types, click the grey x of the regular fluid. The x turns red to indicate that “Do Not Serve” is applied across all fluid types.
Resetting Fluid Recipe Row
If you not satisfied with your choices for the row, just click the x or check mark of the regular recipe to populate the row, and then click the x or check mark again to clear the row.
Changing Portion Size of Substitute Fluid Recipe
To edit the portion size of a substitute recipe:
- Click into the fluid substitution grid cell of the substitute recipe you want to edit (first screenshot below). The Edit Extension pop-up appears (second screenshot below).
- Select or enter the new portion size in the Change Portion Size field.
- Click the Update Extension button to apply your changes.
Editing a Fluid Substitution Grid Cell
You can change the original option you chose for a fluid substitution grid cell. For example, you originally selected a substitute recipe but now want to change to the regular recipe. To edit a fluid substitution grid cell:
- Click into the cell of the substitute recipe you want to edit (first screenshot below). The Edit Extension pop-up appears (second screenshot below).
- From the Change To field, select the new option:
- Serve Regular Recipe
- Serve Existing Recipe
- Do Not Serve
- Extension Template - exists only if an extension template has been built by MealSuite system managers for the fluid type and recipe category.
- Click the Update Extension button to apply your changes.
Editing a Substitute Fluid Recipe
You can open a recipe being used as a substitute by searching for it via the Recipes screen. However, a quicker means to access the recipe is via the fluid substitution grid grid to which it belongs. To edit a substitute recipe via a fluid substitution grid:
- Click into the fluid substitution cell of the substitute recipe you want to edit (first screenshot below). The Edit Extension pop-up appears (second screenshot below).
- Click the Edit link beside the recipe. The recipe opens in a separate browser tab for you to make your edits.
- Rather than repeat the instructions here on editing a recipe, the same details can be found on the Creating a New Recipe topic (start at step 3 of the Getting Started section).
Reverting Fluid Substitution Grid to Master
The Revert to Master button reverts the fluid substitution grid to the original settings of your parent account.
Removing a Fluid Type from a Recipe's Fluid Substitution Grid
If a fluid type is unpublished in the system, it can be removed from the fluid substitution grid via the Diet Orders Setting screen (Tools & Setup > Diet Orders). See the following article for specific instructions:

How do I add a new fluid type to use in my fluid substitution grid?
A new fluid type can be requested from the MealSuite Nutrition Services team. See the following article: Requesting a New Diet Type, Texture Type or Fluid Type.
I don't see a fluid type on a fluid substitution grid?
If you do not see a fluid type on a fluid substitution grid, it indicates that it is configured to be hidden from fluid substitution grids.
To show a fluid type on fluid substitution grids, open the fluid type and select its Include in Fluid Sub Grid check box (screenshot below). Click here for specific instructions on showing/hiding a fluid type on fluid substitution grids.
More Info: A fluid type can be configured to be hidden from fluid substitution grids only if the fluid type is unpublished. A fluid type is unpublished to prevent it from being assigned to residents/patients, but can still be available in fluid substitution grids to allow you to extend the recipe with fluid recipe substitutes.
