Adjusting Total Needed Forecasting Amounts for a Menu Item
Total needed forecasting is configured with default serving amounts (either via the Total Needed Forecast Method or a forecast exception) and then applied to a menu that has no choices and is non-extended (i.e., does not support therapeutic substitute recipes). The forecasting amounts can be adjusted for a menu item via the steps below:
- Open the menu to the menu day view for the desired day.
- Click the Forecasting button. The Forecasting slide-out panel appears.
- From the Meals field, select the desired meal period (Breakfast, Lunch, Dinner).
- An items can be represented by its serving amounts or by its total unit of measurement. For example, 10 servings of soup required or 60 fluid ounces of soup.
- To display the serving amounts needed for an item, select Serving from its Measure field.
- To display the total unit of measurement needed for an item, select Total from its Measure field.
- For the item to adjust forecasting for, enter its new amount in the Amount field.
- Click the Save button to apply your changes.
What Happens on the Associated Forecasting Worksheet?
When you adjust total needed amounts for a menu item, then that new amount is listed for the item on the associated forecasting worksheet.
Also note that if you manually adjust the serving amounts for an item on the forecasting worksheet, then that amount is updated for the item on the menu.
What Happens if the Default Amounts are Changed?
If the default amounts are changed (either via the total needed forecast method or a menu forecast exception), then those default amounts overwrite any changed amounts set for the menu items and the forecasting worksheets.
