Does the rating area include the ability to give reasons for the ratings or suggested edits for the recipe?
Yes, along with providing a 1 through 5 star rating, you can add comments with your suggestions and feedback within the recipe rating. See Rating a Master Recipe.
How are preparation hours calculated?
For each recipe ingredient, its time is AI-calculated by its amount and any associated pre-prep step (e.g., drained, sliced, peeled). The total time of all ingredients is displayed in the read-only Estimated Ingredient prep time field. See Skill Level and Preparation Time for a Recipe.
How do we adjust preferences on a recipe, or preferences associated to an ingredient?

In addition, you can create a preference group and add ingredients to that group that are tied to the recipes those ingredients are utilized. See Creating a Preference Group
If we own an recipe and change ingredients/preferences, etc., and that recipe is used as an ingredient in another recipe, will those be carried over to the other recipes or do those need to be done manually?
If the recipe you altered is used as an ingredient within another recipe, then yes those preferences or changes will flow through without any manual intervention.
What is difference between "edit" and "set" extension?
The Edit Extension option for an extension grid cell allows you to modify the cell by either selecting a substitute recipe, serving the regular recipe, creating a new recipe from a save as, using an extension template, changing the portion size, or setting the cell as do not serve.
The Set Extension is an option to clear the current settings in the cell (reset). If a cell reads Set Extension, it indicates that cell has no settings.
When we choose the eyeball view (preview) a recipe we're adding as an ingredient to another recipe, will it display the actual steps rather than repeat step 1?
Yes, for a recipe that you are considering adding as an ingredient, clicking its "eye" icon to view its details shows the preparation steps for that recipe.
