About the Scaled Recipes Report
The scaled recipe report generates a production report of up to four different serving yields for each selected recipe.
How to Get a Recipe Included in the Report
For a recipe to be included in the Scaled Recipes Report (Recipes), its Include in scaled recipes and cookbooks check box must be selected, as per screenshot below (see Editing a Recipe for more information).
Scaled Recipe Report Settings
After selecting the recipes to generate in the report, then from the left side of the screen select the Scaled Recipes option. The Scaled Recipes section appears for you to select the scaled recipes report settings.
- Yield - enter the four serving amounts that the report will generate. For example, 10, 20, 50, 100.
- Report Sort Order - select Alpha to sort the report alphabetically, or select Recipe Category to sort the report by recipe categories.
- Financials - displays costing per serving for each recipe at top right of a recipe. Also displays the Product ID column and Vendor column for each ingredient of a recipe.
- Nutritional Info - displays up to six nutrients with the recipe. The nutrients to be included are selected via Tools & Setup > Recipe Tools > Key Nutrients tab. See Selecting Key Nutrients for more information. Selecting the Nutritional Info check box also displays any allergies associated with the recipe.
- Picture - displays the image for each recipe, assuming a recipe has an image.
- Table Of Content - generates a table of contents at the beginning of the report.
-
Included Tags - if any custom tags are applied to the recipes, then these custom tags will be generated for the recipes. When including custom tags, you have the option of displaying the tag icon or the tag display name via the Icon and Display Name options, respectively.
Display of Recipes and Prepared Foods as Ingredients (Sub Recipes)
If a recipe or prepared food is used as an ingredient in a recipe (i.e., sub recipe) and that recipe/prepared food has the Include in scaled recipes and cookbooks option selected (see above), then the sub recipe name is displayed as an ingredient and in parenthesis the page number reference is listed where the recipe details are printed in the report. Note that a sub recipe prints after the recipe it is part of.
If a recipe or prepared food is used as an ingredient in a recipe (i.e., sub recipe) and that recipe/prepared food does not have the Include in scaled recipes and cookbooks option selected (see above), then the sub recipe is displayed as an ingredient but with the text Recipe excluded from cookbook displayed in parenthesis.
System Calculation for Scaling Ingredient Amounts
When a recipe is scaled to new serving amounts (i.e., yield), the amount of each ingredient is adjusted accordingly by the system.
The calculation that is used to adjust the amount of an ingredient is as follows: New yield / original yield x ingredient original amount = new ingredient amount.
For example:
| New Yield | Divided by original yield | Multiplied by ingredient original amount | Equals new ingredient amount |
|---|---|---|---|
| 50 | 30 | 1.33 gallons | 2.22 gallons |
| 2 1/4 cup | 3 3/4 cup | ||
| 37.5 each | 62.5 each |
FAQs:
Why is the unit of measure different between the recipe and the report?
On the Scaled Recipes report, the original unit of measure for an ingredient on the recipe screen will be adjusted to a practical unit of measure for production staff to use.
For example, on the original recipe, 1.25 lbs of onions are needed for 50 servings (first screenshot below). On the Scaled Recipes report, the unit of measure for 50 servings is printed as 1 lb 4 oz (second screenshot below) rather than printing 1.25 lbs, which would be too awkward for production staff. In keeping with the same example, 15 servings results in 6 oz of onions (rather than .375 pounds).
Why is a recipe not included in my Scaled Recipes report?
For a recipe to be included in the Scaled Recipes report, its Include in scaled recipes and cookbooks check box must be selected, as per screenshot below (see Opening a Reciipe to select this check box).
The unit of measure for an ingredient was changed from cups to quarts (US system), or cups to litres (CDN system)?
The system scales five (5) cups or more to the equivalent in quarts (US system) and litres (CDN system).
For example:
- 6 cups = 1.4 L (CDN)
- 6 cups = 1 1/2 Qt (US)
