Automatically Adjusting Ingredient Amounts to Match Portion Size ("My Recipe" Only)
When you review a recipe, you may notice that its estimated serving size does not match the portion size for the recipe. This is likely due to the serving number being too low/too high for the total ingredient amounts for the recipe.
In the chicken dijon example recipe below, the Estimated Serving Size is 21.35 oz and the Servings are only 10, which means that the total EP amount of ingredients (213.50 oz) is divided by only 10 servings, resulting in the estimated serving size of 21.35 oz, which is too high for the ideal portion size of 4 oz.
An option is to calculate and adjust the serving number to adjust the estimated serving size to match the portion size (see Calculating and Entering New Serving Number). However, if you do not want to adjust the serving number, then the other option is to adjust the ingredient amounts to adjust the estimated serving size to match the portion size.
Rather than doing the math for each ingredient to adjust the estimated serving size, you can use the yield tool to automatically calculate the new ingredient amounts based on the portion size. To do so, complete the following steps.
- Your first step is to obtain the desired estimated serving size to match the portion size, which in the example below is 4 oz. You do this by entering the serving number to automatically adjust the estimated serving size accordingly. Keep entering a different number until you achieve the desired result. In the example screenshot below, entering 53 servings adjusts the estimated serving size to 4.03 oz.
- With the desired estimated serving size achieved, your next steps are to use the scale function to automatically adjust the ingredient amounts. Click the adjust icon beside Yield and the Yield Adjustment window appears (second screenshot below).
- In the Scale To field, enter the original serving number of the recipe (which in this example is 10), and then click Calculate. The window refreshes with the new ingredient amounts.
- Click the Update Recipe Yield button to apply the new ingredient amounts to the recipe.
- Click the Save button to apply your changes.
Note: The recipe cost will be affected accordingly when the estimated serving size is adjusted.
Manually Adjusting Ingredient Amounts ("My Recipe" Only)
You can manually adjust the ingredient amounts of a "My Recipe" recipe (i.e., a recipe owned by your account). When you adjust the ingredient amounts, the recipe's estimated serving size will adjust automatically to accommodate the new ingredient amounts against the recipe's serving number, and as such you will have to manually adjust the portion size of the recipe. Note also that the recipe cost will be affected accordingly when you adjust ingredient amounts.
To manually adjust ingredient amounts in a recipe, complete the following steps:
- Open the recipe and click the Ingredients and Preparation tab.
-
Click the Edit icon (
) of the ingredient to edit. The Edit Ingredient pop-up appears (second screenshot below).edit_icon2.png
- In the Amount field, enter the new amount.
Note that if the ingredient uses a special unit of measure (SUoM), such as "Each" or "Slice", then click the Edit icon () beside the Measure field to display the Special Unit of Measure pop-up (screenshot below). Enter the amount in the Amount field, and then click Save to apply your changes.
- Click the Update Ingredient button to apply the changes.
- Update the Portion Size with the new amount. If there is a Portion Size description (Portion Size Description field), update it accordingly. Also, you have the option to enter the portion size in the Display Name.
- Click the Save button to apply your changes.
