About the Unit of Measure (UoM) on a Master Recipe

For a master recipe using a standard unit of measure (UoM) for its portion size, you can change the unit of measure to the preferred UoM desired by your facility. 

For example, if the UoM for an apple juice master recipe is fl oz, then this can be changed to cup, ml, or scoop. 

When changing the preferred UoM, the system will automatically convert the amount so as to maintain the same nutrition and cost and prevent you from having to manually calculate the conversion. In keeping with the above example, if the juice is 4 fl oz, then the conversion options are as follows (also indicated in screenshot below). 

  • 1/2 cup
  • 120 ml
  • 1 #8 scoop

Setting the preferred UoM on a master recipe is considered a customization to the master recipe in which certain details of the master recipe can be customized to your account without having to copy the master recipe to your account; see Customizing a Master Recipe to your Account to learn what details can be customized on a master recipe. 

Changing the UoM on a Master Recipe

To change the UoM on a master recipe, complete the following steps:

  1. Open the master recipe (for info on identifying master recipes, click here). As noted above, the master recipe must use a standard UoM rather than a special unit of measure (SUoM), such as "Each" or "Slice" or "Scoop". Therefore, it is recommended to display the Portion Size column on the Recipes Listing screen so that you can easily identify the UoM.

  2. With the master recipe open, click the UoM drop-down for the Portion Size and select the desired UoM and its associated amount, as per screenshot below.

  3. Upon selecting a new UoM, the following confirmation note appears stating that all instances of the recipe on your menus will be updated, and any UoM overrides subsequently set for the recipe category will not be applied.

  4. Click Yes, Update to the message. 
     
  5. Click the Save button on the recipe to apply the changes. 

Reverting UoM of Master Recipe to the Current UoM Precedence Setting

When the UoM has been changed for a master recipe, you have the ability to remove that UoM and change it to the current UoM precedence setting that exists in the system (see UoM Precedence Table below). To do so, click the revert icon beside the UoM drop-down.

Applying UoM for Multiple Master Recipes

By using the recipe bulk edit function, you can apply the desired UoM to selected master recipes. To accommodate recipes that use volume units and recipes that use weight units, the Bulk Edit Recipe window features the following two drop-downs and their associated UoM options: 

  • Volume Units
    • Scoop #
    • Fluid ounces (fl oz)
    • Cups, Tablespoons & Teaspoons
    • Milliliters (ml) & Liters (L)
  • Weight
    • Ounces (oz) & Pounds (lb)
    • Grams (g) & Kilograms (kg)

UoM Precedence Table

The preferred UoM for master recipes can be set at each account level in the system, so as to prevent you from having to modify individual master recipes. See Setting the Unit of Measure Preference for Master Recipes in your Account.

If a parent account sets their preferred UoM for master recipes in its account, those settings will cascade down to its child accounts. However, if a child account sets its preferred units of measure--either at the account itself or on individual master recipes--then the child account settings take effect, and any subsequent changes by the parent account do not take effect at the child account.  

The table below explains the UoM precedence that takes effect when UoM settings exist at different levels.

FAQs:

Can the UoM be changed on a master recipe that is a prepared food?

Yes. The UoM on a master recipe that is a prepared food can be changed. 

Can I convert a volume unit to a weight unit (e.g., cups to grams)? 

No. Volume and weight units cannot be converted to each other. Volume units (fl oz, cups, mL, scoops, etc.) can only convert to other volume units, and weight units (oz, lb, g, kg) can only convert to other weight units.
