If a fluid recipe can be served in a thickened fluid form, then it needs to be extended with thickened fluid substitutes across the fluid types (Mildly Thick, Moderately Thick, etc.).

Accessing Fluid Substitution Grid for a Fluid Recipe
To access the fluid substitution grid for a regular fluid recipe so that you can add or modify its thickened fluid substitutes, complete the following steps:
- From the left navigation sidebar, select Menus & Recipes > Recipes Listing. The Recipes Listing screen appears.
- Locate and open the recipe you want to extend.
- Click the Extensions tab.
- In the Fluid Recipe section, if the Extend This Recipe check box is not selected, then select it to display the extension grid for the recipe.
About the Fluid Substitution Grid
Layout
The regular fluid recipe is displayed as a row and the fluid types (Mildly Thick, Moderately Thick, etc.) are displayed as columns for you to assign the thickened fluid substitutes. A thickened fluid substitute assigned to a fluid type is then available to a resident/patient who has been assigned that fluid type in their profile.
Why is a Cell Grey?
If a cell is grey, it indicates that fluid type is unpublished, which means the resident/patient cannot be assigned that fluid type. However, the cell remains available to assign thickened fluid substitutes. Note that fluid types are published/unpublished via the Diet Order Settings screen (Tools & Setup > Diet Orders); see Publishing/Unpublishing a Fluid Type for more information.
Hovering your cursor over a grey extension cell displays the text Unpublished.

Why Does a Fluid Type Have a Blue Header?
The parent-child account hierarchy structure in the Mealsuite system allows fluid types owned by a parent account to assign maintenance responsibility of those fluid types to their child accounts.
What this means is that the parent account will no longer be responsible for extending to those fluid types when extending a recipe with thickened fluid substitutes. Instead, the responsibility for extending thickened fluid substitutes to those fluid types will be with each child account.
When a child account has been assigned maintenance responsibility for a fluid type, then the header of such a fluid type is highlighted blue in the fluid substitution grid (screenshot below).
Warning! For fluid types that continue to be maintained by your parent account, it is still the responsibility of your facility to review the thickened fluid substitutes for these fluid types to make sure the thickened fluid substitutes are appropriate for your facility standards that you have for fluid types.

Setting a Fluid Type Cell that is Empty
When a fluid type cell is not set, it presents with the Set extension text, as per screenshot below.
To set an empty fluid type cell:
- Hover your mouse over the fluid type cell.
- Click the setting icon ( ... ) and select from one of the following options:
Editing a Fluid Type Cell that is not Empty
For a fluid type cell with an existing recipe (i.e. thickened fluid substitute or regular recipe), it can be edited as follows:
- Hover your mouse over the fluid type cell.
- Click the setting icon ( ... ) and select Edit Extension (first screenshot below). The Edit Extension window appears (second screenshot below).
- From the Change to drop-down, you have the following options (click on an option to see its specific instructions):
Option: Serve Regular Recipe
Selecting this option serves one portion size of the regular fluid recipe for the fluid type. When the regular fluid recipe is served for a fluid type, the associated cell contains a green check mark.
Option: Do Not Serve
Select this option if there is no appropriate thickened fluid substitute for a fluid type.
Option: Search for Substitute
Selecting this option opens the Serve for substitute window for you to search for and select an appropriate thickened fluid substitute for the fluid type.
Use the filters as needed (described below) to narrow down your search for the appropriate thickened fluid substitute.
- Food Type - filter by recipe and/or prepared food.

Categories - filter by recipe categories (if searching for recipes) and food categories (if searching for prepared foods). Note that if searching for both recipes and prepared foods, recipe categories are listed first in the drop-down, followed by food categories.
- Portion Cost Range - enter the cost range of the item (recipe cost, prepared food cost) you are searching for. Note that this filter applies to items within your selections in the Categories field, the Recipe Box field, or at least three characters entered in the Search field.
- Tags - filter by tags applied to recipes and prepared foods.
- Owner - this field lists your account and all parent accounts. Select one or more accounts whose recipes you want to select from.
- Recipe Box (available only if Recipe is selected from Food Type) - a recipe box label identifies the recipe (e.g., Entrees Poultry, Entrees Vegetarian, etc.), including a therapeutic substitute (e.g., Gluten Free, LoCal, Low Salt, etc.) and/or IDDSI-compliant (e.g., SB6, MM5, etc.) recipe.
- My Recipes Only - searches for only recipes owned by your account (recipes owned by your account have the My Recipes label in the Recipe Box; see What is a "My Recipes" Recipe? for more information). Note that selecting the My Recipes Only checkbox also automatically selects your account, and only your account, in the Owner field.
Option: Create Substitute from Template
An extension cell may have a template available as an option to quickly create a thickened fluid substitute for the designated fluid type (i.e., Mildly Thick). For example, if extending a recipe that belongs to the Beverages category, then in the Mildly Thick cells of the fluid substitution grid, there is Create Substitute from Template option.

Option: Create Substitute from Save As
If the item is a recipe and not a prepared food, then the Create Substitute from Save As option is available.
Selecting this option opens the Copy Recipe pop-up (screenshot below) for you to create a new thickened fluid recipe using the existing recipe as a base (i.e., copying an existing recipe).
- The Name field is the recipe's unique name in the system, also known as a lookup name. Add the appropriate fluid type identifier to the name (e.g., “MT" for mildly thick). In addition, add a facility identifier at the end of the name to identify it as a recipe owned by your account.
- The Display Name is the recipe's user-facing name that appears in menus and reports, and the front-end ordering apps (Touch app, POS, Portal app). Add the appropriate fluid type identifier to the name (e.g., “MT" for mildly thick).
Once the new recipe is saved, it will be available as a “My Recipe” (i.e., a recipe owned by your account), which you can edit it accordingly. For example, replace milk with mildly thick milk. See Opening a Fluid Substitute Recipe from a Fluid Extension Grid for more information.
Note that for the original recipe that was copied, its copied recipes appear as links in the Related Recipes section below the recipe image. Clicking a recipe link opens the recipe in a new browser tab.
Changing Portion Size of a Thickened Fluid Substitute on the Fluid Substitution Grid
To change the portion size of a thickened fluid substitute on the fluid substitution grid:

Open the Edit Extension window for the fluid type cell of the thickened fluid substitute.
- Select or enter the new portion size in the Portion field.
- Click the Update Extension button to apply your changes.
Copying a Single Fluid Substitution Grid Cell
If a recipe (thickened fluid recipe or regular fluid recipe) in a fluid substitution grid cell is appropriate for another cell, you can copy and paste that recipe into another cell as follows:
- Hover your mouse over the extension cell to be copied.
- Click the setting icon ( ... ).
- Click Copy Cell. The cell turns light blue and states Copied.
- For the cell to be pasted with the recipe, click into it. The cell turns light blue and states Pasted.
- Continue to click into the cells that you want copied with the recipe.
- At the top of the grid, click Confirm to apply your changes.
Note: If not wanting to save the copied cells, click the Cancel button.
Extending Regular Fluid Recipe across All Fluid Types
To extend the regular fluid recipe across all fluid types, click the settings icon ( ... ) of the regular fluid recipe and select Set Row as Regular Recipe.
Applying “Do Not Serve” for all Fluid Types
To apply ”Do Not Serve” across all fluid types, click the settings icon ( ... ) of the regular fluid recipe and select Set Row as Do Not Serve.
Opening a Fluid Substitute Recipe from a Fluid Extension Grid
You can open a fluid recipe being used as a substitute by searching for it via the Recipes Listing screen. However, a quicker means to open the fluid recipe is via the extension grid to which it belongs. Once opened, you can then edit accordingly. To open a substitute recipe via an extension grid, complete the following steps:
- Hover your mouse over the diet type/texture type cell.
- Click the setting icon ( ... ) and select Edit Extension (first screenshot below). The Edit Extension window appears (second screenshot below).
- Click the Go To Recipe link. The recipe opens in a separate browser tab for you to make your edits.
- Rather than repeat the instructions here on editing a recipe, the same details can be found on the Creating a New Recipe topic (start at step 3 of the Getting Started section).
Clearing a Fluid Type Cell
To clear a fluid type cell:
- Hover your mouse over the cell.
- Click the setting icon ( ... ), and select Set Extension (first screenshot below).
- The cell is cleared and displays the Set extension text (second screenshot below).
About Modifying the Fluid Substitution Grid of a Master Recipe
If you have edited the fluid substitution grid of a master recipe, then the Revert to Master button is available above the grid to return the grid to what is currently on the master recipe. For more information, see Reverting Recipe Extensions to the Master Recipe.
Removing a Fluid Type from a Recipe's Fluid Substitution Grid
If a fluid type is unpublished in the system, it can be removed from the fluid substitution grid via the Diet Orders Setting screen (Tools & Setup > Diet Orders). See the following article for specific instructions:

How do I add a new fluid type to use in my fluid substitution grid?
A new fluid type can be requested from the MealSuite Nutrition Services team. See the following article: Requesting a New Diet Type, Texture Type or Fluid Type.
I don't see a fluid type on a fluid substitution grid?
If you do not see a fluid type on a fluid substitution grid, it indicates that it is configured to be hidden from fluid substitution grids.
To show a fluid type on fluid substitution grids, open the fluid type and select its Show in Fluid Sub Grid check box (screenshot below). Click here for specific instructions on showing/hiding a fluid type on fluid substitution grids.
More Info: A fluid type can be configured to be hidden from fluid substitution grids only if the fluid type is unpublished. A fluid type is unpublished to prevent it from being assigned to residents/patients, but can still be available in fluid substitution grids to allow you to extend the recipe with thickened fluid substitutes substitutes.
